Quinoa Salad, Not Just For the Heath Conscious

This Quinoa Salad is of our own invention and craft. We created this recipe from the inspiration of having it at get-togethers and trying it from the grocery deli. We have heard of Quinoa before and knew that it was nutritious, but we did not know how curiously delicious it was. That you don’t have to eat just because of some fitness health goal to eat it, and in this case delicious is nutritious. Carrying on, our twist to this recipe is that we make it with Greek flair which greatly livens the taste and texture of the salad. Secondly, this recipe is made entirely from superfoods and the health benefits from eating this salad soars off the chart. For these reasons this is one of my personal favorite side dishes.

Quinoa is known as a superfood because it’s a healthy starch, healthy protein, and a good source for nutrition. Quinoa is one of the few foods that is a perfect protein it all by itself. Aside from the quinoa, next on the superfood list is kale. Yep, kale is in this recipe and kale is known to be the most nutritious food on the planet for humans to eat. Here’s the Greek Jazz!

Our Quinoa Salad recipe closely resembles a typical Greek Salad. However, through trial and error with this recipe, we have come to learn that not all Greek Salad recipes are the same. We found it interesting to find so many variations of Greek salad dressing. In the end most did not work for us for one reason or another, so we adapted the best components of a variety of Greek salad dressing recipes. The problem we all know is that Greek salad dressing is primarily composed of red wine vinegar and olive oil. We all know that oil and vinegar do not mix, so you can guess what happens when you add Greek salad dressing to Quinoa Salad. The dressing does not stick well and vinegar and oil separate in the salad. To overcome this challenge, we used dijon mustard as an emulsifier to keep the oil and vinegar together longer. This greatly improved the stability of the dressing when it is served.

  1. Gather the ingredients. Then read the secrets found here.
  2. Boil quinoa according to package directions. Cool it in fridge or freezer.

  3. Prepare the vegetables. Wash and clean the kale, dice cucumber and red onion. Drain black olives and slice in half.

  4. Mix all the ingredients for the dressing. Shake it well.

Chef Tips: Making Great Quinoa Salad

The ingredients for this recipe can be prepared in any order, but I recommend cooking the quinoa in advance, so that it has time to cool before combining everything.

The Classic Greek Salad Dressing is versatile for just about any salad. Many other Greek salad dressing recipes do not have lemon in them or basil. The difference in taste is huge, With lemon and with basil they cut down on the sour flavor the dressing might have otherwise and actually makes the flavor more balanced for a more clean and refreshing taste.
