  1. Prepare southwestern coleslaw.

  2. Trim the tilapia fillets in half.

  3. Slice the tilapia at a diagonal bias to create long strips.

  4. Prepare your cooking area with the flour, egg, and panko.

  5. Preheat a frying pan with oil. Heat until oil reaches a temperature between 350F (175C) and 375F (190C).

  6. Thoroughly coat the fish in flour, and then let the fish rest 3-5 minutes to create a good bond between the fish and the flour.

  7. Transfer a batch of fish to the egg wash, and let the fish sit in the egg wash for 3-5 minutes to let the flour absorb the egg.

  8. Coat the fish with panko. Be sure to push the panko with gentle force on to the fish with your fingers. This ensures the panko sticks well to the egg.

  9. Begin to fry the fish in batches. The oil should immediately bubble when fish is put in the frying pan.

  10. Fry both sides of the fish to a golden brown and then transfer to a plate with paper towel.

  11. Dice a tomato for garnish on the tacos.

  12. Slice green onions for garnish on the tacos.

  13. Set up the table with the ingredients for assembling the fish tacos.

  14. Place fish in the tortilla wrapper first, fill the taco with the southwestern coleslaw, then garnish the taco with diced tomatoes and green onions. Top with siracha if desired.
